Fresh Herb Pesto

What you'll need:

Ingredients:
2 cups fresh basil, leaves only
3 TBSP sunflower/pumpkin seeds
2 large peeled garlic gloves
2 TBSP lemon juice
3 TBSP nutritional yeast (optional)
1/2 tsp sea salt
2-3 TBSP EVOO
3-6 TBSP water
Preparation:
To a blender add the basil, nuts, garlic, lemon juice, nutritional yeast (opt), and salt
Blend until a loose paste forms.
Add olive oil a little at a time scraping down sides as needed.
Then add 1 Tbsp (15 ml) water at a time until the desired consistency is reached – a thick but pourable sauce.
Notes:
Try adding different fresh herbs to achieve different flavours - like coriander, mint, parsley
