Fresh Herb Pesto

What you'll need:

  • blender

  • spatula


Ingredients:

  • 2 cups fresh basil, leaves only

  • 3 TBSP sunflower/pumpkin seeds

  • 2 large peeled garlic gloves

  • 2 TBSP lemon juice

  • 3 TBSP nutritional yeast (optional)

  • 1/2 tsp sea salt

  • 2-3 TBSP EVOO

  • 3-6 TBSP water


Preparation:

  1. To a blender add the basil, nuts, garlic, lemon juice, nutritional yeast (opt), and salt

  2.  Blend until a loose paste forms.

  3. Add olive oil a little at a time scraping down sides as needed.

  4. Then add 1 Tbsp (15 ml) water at a time until the desired consistency is reached – a thick but pourable sauce.


Notes:

  • Try adding different fresh herbs to achieve different flavours - like coriander, mint, parsley
