This nutritious banana bread recipe requires just a few basic ingredients to create the most delicious banana bread. It features wholemeal flour and is sweetened naturally with either honey or maple syrup. You can easily adapt this recipe to be vegan or gluten-free.

Banana breakfast loaf

What you'll need:

weighing scales
loaf tin
baking paper
Ingredients:
75g butter, softened
100g honey/maple syrup
125g plain flour
100g wholemeal flour
2 tsp baking powder
2 eggs
4 ripe bananas, mashed
50g pecans, each snapped in half
Preparation:
Heat the oven to 180c/fan 160c.
Beat the butter, sugar, flours, baking powder, eggs and banana together.
Stir in the nuts and spoon into a lined and buttered 450g loaf tin.
Bake for 50 minutes or until a skewer comes out clean.
Notes:
To make this recipe vegan: replace butter with olive/coconut oil and replace the eggs with 1 tbsp ground flax + 2 tbsp water
To make this recipe gluten free : replace the flours with gluten free alternatives of your choice
