About the Recipe

Delightful and simple to prepare, this freshly made pasta can be enjoyed with just olive oil and Parmesan cheese or incorporated into various pasta dishes.

Ingredients

  • 200g all-purpose flour

  • 2 large eggs

  • ½ tsp sea salt

  • ½ TBSP extra-virgin olive oil

Preparation

  1. Place the flour on a board or in a bowl. Make a well in the centre and crack the eggs into it. Beat the eggs with a fork until smooth.

  2. Using the tips of your fingers, mix the eggs with the flour, incorporating a little at a time, until everything is combined. 

  3. Knead the pieces of dough together – until you have a smooth lump of dough! 

  4. Work it.

  5. Wrap the dough completely in clingfilm and rest I fridge for at least 30 minutes

  6. Roll in a pasta machine or by hand with a rolling pin (and plenty of extra flour)
