About the Recipe

This pesto adds a burst of flavor to pasta dishes, pizzas, salads, and more, making it a must-have pantry staple, using fresh herbs from the garden or market. Whether you are a seasoned chef or an enthusiastic home cook, this plant-based condiment is sure to inspire your creativity in the kitchen and is a great way of preserving your herbs .

Ingredients

  • 2 cups fresh basil, leaves only

  • 3 TBSP sunflower/pumpkin seeds

  • 2 large peeled garlic gloves

  • 2 TBSP lemon juice

  • 3 TBSP nutritional yeast (optional)

  • 1/2 tsp sea salt

  • 2-3 TBSP EVOO

  • 3-6 TBSP water

Preparation


  1. To a blender add the basil, nuts, garlic, lemon juice, nutritional yeast (opt), and salt

  2. Blend until a loose paste forms.

  3. Add olive oil a little at a time scraping down sides as needed.

  4. Then add 1 Tbsp (15 ml) water at a time until the desired consistency is reached – a thick but pourable sauce.


Notes:

  • Try adding different fresh herbs to achieve different flavours - like coriander, mint, parsley
